Simply Honey - Raw Forest
Forest honey is darker and has a richer stronger flavour than flower honeys and less vunerable to crystallisation due to its lower glucose levels and higher mineral content. It is not made from blossom nectar but from honeydew secreted by plant sucking insects which is then harvested by the bees. It is good used in rich cakes, as a dessert topping and on ice cream.

All honey crystallizes over time but this is a natural process which doesn’t affect the quality or the taste of the honey, only the texture. If you prefer your honey runny you can return it to its liquid state by placing the jars in a bowl of hot water. Never use the microwave!
